Ingredients :
250 gms ragi flour
150 gms besan flour
5 gms ginger
5 gms chili
2 gms garlic paste
5 gms salt
20 ml oil

Steps –

  1. Take all the dry ingredients and knead them together. Add oil and the required amount of water.
  2. Once it becomes a semi-soft dough, make two equal sizes out of it.
  3. Take one half of the dough and put it through a chakli machine.
  4. Press out the roundels of the dough and put the chaklis in a preheated oven for 15-20 minutes at 360°f.
  5. Repeat the same process for the other half. Let it cool, and the chakli whirls are ready to serve.
  6. Zunka Bhakri
    This traditional snack is made out of besan paste which is cooked with curry leaves, onions, ginger-garlic paste, cumin and mustard seeds. This snack has a rich and aromatic flavour and is best served with bajra rotis.

Ingredients

For the ghol:
1 glass water
2 onions, chopped fine
1/2 tsp red chilli powder
1/2 tsp turmeric
6-7 curry leaves
7-8 coriander leaves
1 cup besan or gram flour

For the sabzi:
4 tsp refined oil
1/2 tsp rai or mustard seeds
1/2 tsp jeera or cumin seeds
1/2 tsp garlic paste
1/2 tsp ginger paste
1 small onion, chopped fine
1/2 tsp green chillies
1/2 tsp salt to taste

Steps –

  1. Firstly, you have to prepare the ghol.
  2. Add some water in a bowl and mix in the onions, turmeric, red chilly powder, curry leaves, coriander leaves, besan.
  3. Then stir all the ingredients well until you reach liquid-like consistency. Keep it aside.
  4. Then, in a kadhi, heat some oil and add mustard seeds and jeera.
  5. Mix in the ginger and garlic paste.
  6. Add onions and green chillies.
  7. Saute the mix till onions turn brown. (2-3 mins)
  8. Now, add the ghol prepared previously to the masala.
  9. Cook for about 6 minutes, till all the water evaporates and a thick yellow paste like residue is left.
    1. Besan Ladoo
      Besan ladoo is a traditional sweet dish made with gram flour and is one of the most popular Indian desserts that is made at every festive occasion. It is an easy-to-make recipe that anyone with little cooking skills can make at home.

Ingredients:
Besan – 2 cups
Ghee – 2-3 cups
Powdered sugar – 1-1.5 cups
Full green cardamoms powdered finely – 4
Raisins – 2 tbsp

Steps:

  1. Dry roast the besan in a kadhai for approximately 10 minutes and keep mixing it so it doesn’t burn.
  2. Melt some ghee, add it to the besan and mix for another 5 minutes.
  3. Switch off the flame once a nutty fragrance comes from the mix.
  4. Add powdered sugar and stir continuously to avoid lumps.
  5. Then, add the cardamom and raisins and let it cool.
  6. Make small balls out of the mix to make the ladoos.
